We are on the hunt for passionate and driven Sous Chef's to support our Executive Chef indelivering innovative culinary experiences that celebrate Melbourne's produce and culinary heritage across multiple venues.
You'll play a key role in inspiring and developing the team to consistently deliver exceptional dishes with flair and efficiency. A rising culinary star, you'll champion food quality, innovation, and consistency with a strong knowledge of and commitment to food safety and hygiene, you'll lead by example and ensure compliance across the board. As the trusted support to your Executive Chef, you'll step up confidently in maintaining smooth operations and setting the tone for outstanding service and team culture.
The Mulberry Group will operate five distinct venues under one roof, each designed to reflect Melbourne's layered food culture while adding something new to the mix. From morning coffee runs to late-night soundtracks, these venues will be seamlessly woven into the rhythm of the hotel and the city beyond.
Hannah St CoffeeDesigned as Melbourne's morning ritual, this hole-in-the-wall café will serve Melbourne-made Square One Coffee, freshly baked pastries, warm cinnamon scrolls, and produce-driven sandwiches and salads.
Coupette Corner Bistro & BarFrom early morning breakfast to long lunches, after-work drinks, and late suppers, Coupette will offer a produce-driven, European-inspired neighbourhood bistro menu with a distinct Melbourne sensibility.
Terrace LoungeA rooftop venue with sweeping views of Southbank, the Terrace Lounge doubles as a vibrant multipurpose event space and a celebration of Melbourne's outdoor dining culture - long lunches by day and a sparkling scene of cocktails and music by night.
Bar HannahThe quintessential lobby bar reimagined as a neighbourhood hub. In the morning, it is perfect for locals and guests easing into their day. From afternoon into evening, Bar Hannah transforms into a plush cocktail bar with an elevated snack menu and curated wine list.
The Carriage LoungeElegant, moody, and intimate, The Carriage Lounge is designed as a calm retreat. Whether it's a pre-dinner glass of wine, a late-night whisky, or an intimate chat, it offers the sophistication of a private living room with the comfort of a favourite local haunt.
Responsibilities include (and not limited to)- Deliver high-quality, well-presented work with strong attention to detail, setting high standards and supporting smooth service through clear instructions and preparation.
- Lead fast-paced, collaborative kitchen service, responding constructively to feedback to ensure a positive experience for guests and team members.
- Manage kitchen operations including stock control, hygiene, and food safety compliance, maintaining smooth and safe daily functioning.
- Provide leadership, conduct briefings and ensuring team consistency, clarity and continuity at all times.
- Mentor and train new team members, fostering a culture of professionalism, teamwork, and enjoyment while upholding food safety and equipment standards.
- Collaborate across departments, supporting broader operations and reinforcing a united team environment to deliver a world-class guest experience.
You're an experienced Sous Chef or Experienced Chef who thrives on creativity, scale, and leadership. You bring:
- Leadership experience in award-winning restaurants, luxury hotels, or multi-outlet operations.
- A produce-driven, contemporary food philosophy with a strong eye for detail and originality.
- A proven track record of creating, building and retaining exceptional kitchen teams.
- Strong financial acumen and operational management skills, including HACCP and food safety practices.
- A guest-first mindset-crafting menus and experiences that resonate with both locals and international travellers.
